Ingredients

  • 4 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 4 cups all bran flakes
  • 5 cups plain flour
  • 1 tsp vanilla
  • 250g raisins or sultanas or chocolate chips
  • 4 cups milk ( or 2 cups milk and 2 cups buttermilk)
  • 5 tsp bicarbonate of soda
  • 1 tsp salt

Method

  • STEP 1
    Beat the eggs and oil together until creamy
  • STEP 2
    Then mix together with all the other ingredients And leave overnight in the fridge
  • STEP 3
    Pre-heat oven to 180C/fan 160C/gas 6
  • STEP 4
    line a 12 hole muffin tin with muffin cups and spoon in the mixture until the cups are almost full
  • STEP 5
    Bake for 15-20 minutes or until lightly browned and cooked through
  • STEP 6
    This mixture makes more than 12 muffins at a time and can be kept in the fridge for up to 6 weeks. Make fresh muffins every day!
