These yummy chocolate cupcakes with buttercream are perfect for any occasion

Ingredients

  • 200g soft margarine
  • 100g caster sugar
  • 2 eggs
  • 100g self raising flour
  • 1.5 tbsp milk
  • 1.5 tbsp cocoa powder
  • 1 tsp baking powder
  • 50g icing sugar
  • choice of decorations

Method

    1. Put 12 baking cases in a muffin tin
    2. Cream 100g of the margarine and all the sugar in a bowl until light and fluffy
    3. Beat eggs in a seperate bowl until bubbly
    4. Gradually add them to the mixture beating well in between additions. Make sure they are well mixed into the sugar and marge mixture.
    5. Sieve the flour and cocoa powder into the mixture and beat slowly
    6. Add the baking powder and mix
    7. Add the milk and beat. Add the mixture into the cases and bake in a preheated oven of 180C for 20 minutes
    8. When cakes have cooled, beat the icing sugar and the rest of the margarine together to create buttercream
    9. Decorate with choice of decorations
