I have stuffed my Christmas Turkey with this stuffing for many years - my family loves it!

Ingredients

  • 60g dried apricots, chopped
  • 125g bacon pieces, chopped and fried
  • 1 large onion, chopped and fried
  • 2 sticks celery, thinly sliced
  • 100g brown breadcrumbs
  • 250g pork sausagemeat
  • 75g almonds
  • 2tblsp chopped parsley
  • 1 egg
  • 1tsp salt
  • ground pepper

Method

    1. Mix all ingredients together in a bowl (by hand is best)
    2. Stuff into the neck end of the turkey, pushing as far under the skin over the breast as you can
    3. Cook turkey as normal

This is excellent stuffing. I tend to double the recipe and then cook in two loaf tins, cover with tin foil to prevent the top burning, for approx 45 mins at 180C. I then freeze one tins worth and slice up the other for eating with the chicken or turkey.

Left out the bacon bits because I didn't have any, but was still outstanding!
