Ingredients

  • 200g butter
  • 200g dark chocolate
  • 200g gluten free flour
  • 1tsp baking powder
  • 2tbsp cocoa
  • 150g golden caster sugar
  • 125mls milk
  • 3 medium eggs

Method

    1. In a large bowl, melt the butter and chocolate (in a microwave) or over a pan of simmering water stirring occasionally. Allow to cool slightly.
    2. Meanwhile, in a large bowl combine the flour,baking powder, cocoa and sugar.
    3. Whisk together the eggs and milk and add to the dry ingredients, along with the melted chocolate mixture.
    4. Beat together untill thoroughly combined. pour mixture into a lightly greased and lined tin about 15cm(6inch) square tin and bake in a preheated oven
    5. bake for about 15-20 minutes at 180C/350fan/gas mark 5 until well risen and firm to touch. Allow to cool and cut into squares and enjoy!!!

I have just made these - I followed the recipe closely, although I added a bit of extra cocoa powder. They are delicious - I'm a complete amateur but these taste great! I think the texture will depend on how fine the GF flour you use is. I used doves farm gluten free flour and supermarket own brand value dark choc. I did make sure I sieved all the ingredients and whisked with an electric whisk, so it was really fluffy. My brownies are quite cakey, with a nice crust. I think I'll need to experiment with oven timings to see if a little less time gets a gooier middle. I would definitely recommend this recipe.

The cooking time or the temperature of the oven (or both) are wrong in this recipe. The first time I made the brownies, the batter in the middle of the tin was really uncooked, so I added some cooking time the second time round. I had to practically double the time, and still I'm not sure they are fully cooked but don't want to burn the top. I will look for a different recipe next time!

I made these for a catering job and they were inedible! The gluten free flour made the texture really nasty - so i ended up using a Nigella recipe which uses ground almonds instead. Biggest waste of good quality dark chocolate (I made 200 of them!!). Perhaps a different gluten free flour may have yielded different results, but i went for an expensive one thinking the quality would be good.
