Sweet wine cream is sublime with fresh summer fruits, a simple finish for any garden party

  • 750g mixed summer berries
  • 2 tbsp cassis (optional)
  • 5 tbsp sweet white wine
  • 2 tbsp caster sugar
  • 300ml pot double cream
  • icing sugar, to serve


  1. Hull or de-stalk the fruits as necessary, then tip into a serving bowl. Drizzle with cassis, if using, and mix together gently.

  2. Measure the sweet wine and sugar into a bowl. Add the cream and whisk with a hand electric whisk until it just holds its shape and flops from the spoon. Spoon into a bowl and serve with the berries and madeleines.

Try Rose Wine for the cream, it looks beautiful. You can also add some juice from the fruit when it runs to give extra flavour.
