Ingredients

  • 150 g spinach
  • 4 cups frozen snap peas
  • 1 red onion
  • 3 cloves garlic
  • 1/2 cup of snap peas cooking water
  • 3 spring onions
  • Olive oil
  • Salt and pepper

Method

  • STEP 1
    Wash and chop the spinach.
  • STEP 2
    Boil salted water in a saucepan and add the peas.
  • STEP 3
    Get to boil, reserve some cooking water and place the snap peas into a colander.
  • STEP 4
    Peel and chop the red onion.
  • STEP 5
    Peel and finely chop the garlic.
  • STEP 6
    Mix the cooking water and the 3/4 of the cooked peas in th blender.
  • STEP 7
    Season and run the blender.
  • STEP 8
    Chop the spring onions.
  • STEP 9
    Heat olive oil in a skillet.
  • STEP 10
    Add the red onion and the garlic. Stir for a minute or two.
  • STEP 11
    Add the spinach. Stir until the liquid evaporates.
  • STEP 12
    Transfer the spinach mix to a plate.
  • STEP 13
    Heat olive oil in a skillet.
  • STEP 14
    Add the peas from the blender. Stir for half a minute.
  • STEP 15
    Add the rest of the peas.
  • STEP 16
    Add the spinach and the onions.
  • STEP 17
    Season and stir.
  • STEP 18
    Add the spring onions and stir.
  • STEP 19
    Remove from the heat.
  • STEP 20
    Enjoy!
