Spinach and snap pea site dish

Ingredients
- 150 g spinach
- 4 cups frozen snap peas
- 1 red onion
- 3 cloves garlic
- 1/2 cup of snap peas cooking water
- 3 spring onions
- Olive oil
- Salt and pepper
Method
- STEP 1Wash and chop the spinach.
- STEP 2Boil salted water in a saucepan and add the peas.
- STEP 3Get to boil, reserve some cooking water and place the snap peas into a colander.
- STEP 4Peel and chop the red onion.
- STEP 5Peel and finely chop the garlic.
- STEP 6Mix the cooking water and the 3/4 of the cooked peas in th blender.
- STEP 7Season and run the blender.
- STEP 8Chop the spring onions.
- STEP 9Heat olive oil in a skillet.
- STEP 10Add the red onion and the garlic. Stir for a minute or two.
- STEP 11Add the spinach. Stir until the liquid evaporates.
- STEP 12Transfer the spinach mix to a plate.
- STEP 13Heat olive oil in a skillet.
- STEP 14Add the peas from the blender. Stir for half a minute.
- STEP 15Add the rest of the peas.
- STEP 16Add the spinach and the onions.
- STEP 17Season and stir.
- STEP 18Add the spring onions and stir.
- STEP 19Remove from the heat.
- STEP 20Enjoy!
