Ingredients

For the cake

  • 1 cups white sugar
  • 1/2 cup butter
  • 3 eggs
  • 1 cups all-purpose flour
  • 3/4 teaspoons baking powder
  • 1/4 cup milk
  • 1/2 ounces flaked coconut

For the icing

  • 2 ounces flaked coconut
  • 5 tablespoon coconut cream powder
  • 1 cup icing sugar
  • 1/8 cup milk

Method

  • STEP 1
    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch square tin.
  • STEP 2
    Add butter and sugar together in a big bowl. Fold in the eggs one at a time.
  • STEP 3
    Sift flour. In separate bowl, mix the flour, baking powder, milk, and flaked coconut. Mix the two batters together.
  • STEP 4
    Bake 45mins in the preheated oven, or until a knife inserted in the center comes out clean. Cool on a wire rack for 10 mins.
  • STEP 5
    For the coconut icing, mix coconut cream powder, icing sugar and milk. Pour the icing on the cake, and finish off with adding flaked coconut.
