Ingredients
For the cake
- 1 cups white sugar
- 1/2 cup butter
- 3 eggs
- 1 cups all-purpose flour
- 3/4 teaspoons baking powder
- 1/4 cup milk
- 1/2 ounces flaked coconut
For the icing
- 2 ounces flaked coconut
- 5 tablespoon coconut cream powder
- 1 cup icing sugar
- 1/8 cup milk
Method
- STEP 1Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch square tin.
- STEP 2Add butter and sugar together in a big bowl. Fold in the eggs one at a time.
- STEP 3Sift flour. In separate bowl, mix the flour, baking powder, milk, and flaked coconut. Mix the two batters together.
- STEP 4Bake 45mins in the preheated oven, or until a knife inserted in the center comes out clean. Cool on a wire rack for 10 mins.
- STEP 5For the coconut icing, mix coconut cream powder, icing sugar and milk. Pour the icing on the cake, and finish off with adding flaked coconut.
