  • 2 standard eggs
  • 8oz desiccated coconut
  • 5oz caster sugar


    1. Pre-heat oven to 180c. Grease a baking tray Beat eggs well. Stir in coconut and sugar.
    2. Leave to stand for 20 min.
    3. Dip hands in cold water, shape mixture into pyramids.
    4. Place on a baking tray
    5. Put in oven for 25-30min. Remove from tray and cool on a wire rack.

These are soooo easy to make. I make them half the size and put half a glace cherry on the top. Nice, little old fashioned teatime cake.

Mmm, must try these! They remind me of my auntie, who used to mould them in a lightly greased eggcup.

I tried the recipe but found them a little too sweet for my tooth. I will try them again but will try 3 oz of sugar instead of 5 oz. Also, I found the cooking time too long for my cooker and they were cooked before 20 minutes were up.

These were easy to make and very popular with the family. I used unrefined golden caster sugar and added small pieces of dried cranberries. When they were cooked & cooled, I dipped them in some melted dark chocolate. Delicious!

These are so easy to make and are delicious too! I made mini sized ones and used 1/4 glace cherry to decorate each one before going in the oven. Just big enough to satisfy a sweet tooth without over doing the calories!

I have been trying to make these but am just ending up with a good mess!! What am I doing wrong??

I used 6oz of coconut and 2oz of ground almonds. It also only took me 20 mins to cook them instead of the suggested 25-30 mins. I would suggest that you turn the baking tray round after 10 mins. Whoever tasted one said they were de..........lic.............ious xxxxx

I made this recipe for Coconut Pyramids using 6oz of desiccated coconut and 2 oz of ground almonds. I also used 4 oz of castor sugar instead of 5. I found it took less time than it said to cook them ~ as after 20 minutes they were golden brown. I would recommend turning the tray round in the oven after 10 minutes. I would like to add that whoever ate one said that they were de......lic.....ious
