- 12 scallops
- 1 cauliflower head
- 6 tablespoons of broad beans

Method
- STEP 1clean and dry 16 scallops and sprinkle very fine breadcrums over them
- STEP 2boil beans and cauliflower for 5 minutes.
- STEP 3mash cauliflower and add mousse.
- STEP 4panfry scallops for 1 minutes each side and serve on top of mousse and scattered beans
