  • 12 scallops
  • 1 cauliflower head
  • 6 tablespoons of broad beans
  • mousse for cauliflower


    1. clean and dry 16 scallops and sprinkle very fine breadcrums over them
    2. boil beans and cauliflower for 5 minutes.
    3. mash cauliflower and add mousse.
    4. panfry scallops for 1 minutes each side and serve on top of mousse and scattered beans
