Ingredients

  • 12 scallops
  • 1 cauliflower head
  • 6 tablespoons of broad beans

Method

  • STEP 1
    clean and dry 16 scallops and sprinkle very fine breadcrums over them
  • STEP 2
    boil beans and cauliflower for 5 minutes.
  • STEP 3
    mash cauliflower and add mousse.
  • STEP 4
    panfry scallops for 1 minutes each side and serve on top of mousse and scattered beans
