Ingredients
For the Salsa:
- 2 tomatoes - small cubed
- 1 red chili - finely chopped
- fresh baby spinach- 1 handful
- 1 onion- finely chopped
- 1/2 lemon - juice
- 1 tbsp black olives- finely sliced
- coriander - handful, chopped
- salt and pepper -seasoning
- fresh salad leaves- Handful
- mixed raisins and nuts - 1/2 handful
- 1 Tbsp black Olives
- 3 slices of sainsburys Melba toast

- small plastic tub
Method
- STEP 1For the salsa, combine all ingredients in a small tub, once filled, close and shake to combine.
- STEP 2In a serving bowl, place fresh salad leaves at the bottom. Spoon the salsa into the middle, sprinkle the mixed fruit and nuts around the salad. Add olives.
- STEP 3Place the melba toast in a fan style at the side of the bowl, and serve, adding more lemon juice and seasoning if required
