Ingredients

  • For the cakes:
  • 125g butter
  • 1tsp vanilla essence
  • 180ml/3/4 cup caster sugar
  • 2 eggs
  • 360ml/ 1 1/2 cups self-raising flour
  • 180ml milk
  • For the vanilla frosting:
  • 30g butter
  • 480ml/2 cups icing sugar mixture
  • 2tbsp milk
  • 1tsp vanilla essence
  • Food colouring of your choice
  • For the decoration:
  • An assortment of lollies, liquorice straps, chocolate sprinkles, dessicated coconut, food colourings....

Method

    1. Turn the oven to 180'C. Divide 24 cupcake cases between 2 deep 12-hole cupcake trays.
    2. Put the butter, vanilla essence and sugar in the small bowl of an electric mixer and beat on high speed until the mixture is pale and creamy.
    3. Break 1 egg into a small jug and add it to the butter mixture. Beat on high speed until the butter is mixed in. Do the same thing with the other egg.
    4. Then, sift half the flour through a sieve into the butter mixture. Add half the milk and stir until both the flour and the milk are mixed in. The, do the same thing with the rest of the flour and the milk.
    5. Using a tablespoon, put the cake mixture into the cupcake cases. Put the trays into the oven and bake for about 15 minutes or until the cases are lightly browned. Then, once cooked, take the trays out of the oven and put them on a wire rack and cool for 15 minutes. When they are cold, take the cakes out of the trays.
    6. Vanilla Butter Frosting. Put the butter in a medium bowl and then sift half of the icing sugar through a sieve over it. Add half of the milk and all of the vanilla essence, then stir until the mixture is smooth. Do the same thing with the rest of the icing sugar and the milk. Divide the icing sugar among some small bowls and colour each with a few drops of the food colouring of your choice.
    7. Then, the best bit........ Cover the cakes with the vanilla frosting and decorate however you want!
