Ingredients

  • 10 eggs (hard boiled; preferably free-range)
  • 5 small to medium tomatoes
  • mayonnaise or salad cream
  • green salad or herb leaves
  • --> if you don't like eggs, these can also be made with mozzarella cheese.

Method

  • STEP 1
    Cut a slice off the base of the eggs / mozzarella balls so they can stand upright.
  • STEP 2
    Halve and de-seed the tomatoes. Dry them well with some kitchen paper.
  • STEP 3
    Assembly: Place half a tomato each on top of an egg, dot the tomato caps with mayonnaise / salad cream, place on a plate of green leaves, Done!
