Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 1 clove garlic
  • 1 tsp ginger
  • 1-11/2 tspms red thai curry paste
  • 1lb sweet potato
  • 1/2 pint chicken stock
  • 7fl oz coconut milk
  • salt
  • pepper

Method

  • STEP 1
    heat oil and add onoin and garlic, cover and cook for 10 mins
  • STEP 2
    stir in ginger and curry paste and cook for 1 minute
  • STEP 3
    add potato, stock and coconut milk. Bring to boil, cover and simmer for 20 mins
  • STEP 4
    liquidise until smooth
