Ingredients
- 1 tbsp olive oil
- 1 onion
- 1 clove garlic
- 1 tsp ginger
- 1-11/2 tspms red thai curry paste
- 1lb sweet potato
- 1/2 pint chicken stock
- 7fl oz coconut milk
- salt
- pepper
Method
- STEP 1heat oil and add onoin and garlic, cover and cook for 10 mins
- STEP 2stir in ginger and curry paste and cook for 1 minute
- STEP 3add potato, stock and coconut milk. Bring to boil, cover and simmer for 20 mins
- STEP 4liquidise until smooth
