  • 2 oz. Penne per person
  • Jar medium salsa
  • 8 sausages
  • 2 sticks celery, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tin tomatoes, drained, reserve juice
  • 1 tin beans - if liked
  • olive oil for frying


    1. In a large pan fry sausages in olive oil, when cooked, cool and cut into bite sized pieces. In same pan saute celery, onion and garlic until translucent.
    2. Return sausage pieces to pan add salsa, beans and tomatoes plus more tomato liquid if sauce is to thick. Cook for about 10 minutes.
    3. Meanwhile, cook penne to al dente drain and add to pan stir well to coat pasta. Serve.
