Ingredients

  • 2 oz. Penne per person
  • Jar medium salsa
  • 8 sausages
  • 2 sticks celery, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tin tomatoes, drained, reserve juice
  • 1 tin beans - if liked

Method

  • STEP 1
    In a large pan fry sausages in olive oil, when cooked, cool and cut into bite sized pieces. In same pan saute celery, onion and garlic until translucent.
  • STEP 2
    Return sausage pieces to pan add salsa, beans and tomatoes plus more tomato liquid if sauce is to thick. Cook for about 10 minutes.
  • STEP 3
    Meanwhile, cook penne to al dente drain and add to pan stir well to coat pasta. Serve.
