Tuna stuffed cherry peppers

- 24 hours marinating the cherry peppers in wine vinegar

- 10 Cherry peppers
- 1 slice of fresh tuna
- 1/4 litre good olive oil
- white wine vinegar
Method
- STEP 1Carefully cut the tops off the cherry peppers and deseed. Discard the seeds and tops
- STEP 2Marinate the peppers in white wine vinegar for 24 hours
- STEP 3Wash the peppers and blanch in boiling water for a minute or so
- STEP 4Flash fry the tuna steak in until it is just cooked through. Cut into small squares and stuff each pepper
- STEP 5Pour the oil over all the peppers ensuring each is covered. Either seal in a jar or serve fresh
