Ingredients

  • 8 Portabello mushrooms
  • 8 slices marinated red pepper
  • 8 basil leaves
  • 150g ball of mozzarella
  • 4 muffins

Method

    1. Preheat oven to 200c/180c fan, mark 6
    2. Put mushrooms on a roasting tin and season
    3. Top each with a slice of pepper and a basil leaf
    4. Slice mozzarella into 8 and place on each mushroom, season
    5. Roast for 15-20 mins, warm the muffins and top with a mushroom, serve with salad
