Flatbreads with garlic butter

Rustle up this stir-fry with turkey mince, green beans and basil, then top with a fried egg and a scattering of red chilli for a flavour-packed family dinner

Heat 2 tbsp oil in a large frying pan or wok over a medium heat and fry the shallots for 5 mins, stirring often, until sizzling and golden. Add the garlic, chilli and beans, and fry for 2-3 mins more, stirring often to ensure the garlic doesn’t burn.
Add the mince to the pan and continue cooking for another 6-8 mins, breaking up the mince with your spoon, until browned.
Stir in the soy sauce, fish sauce and honey, cook for another 2 mins, then toss in the basil until just wilted. Season well with salt and pepper and add a splash more soy sauce, if needed.
Heat the remaining oil in a frying pan over a medium heat. Crack in the eggs and cook to your liking – a crispy edge and runny yolk works well here. Serve the stir-fry over rice with a fried egg on top, a crack of black pepper and a scattering of red chilli, if you like.
