Method

  • step 1

    Heat the oven to 200C/180C fan/gas 6. Wilt the spinach with a pinch of salt in a frying pan over a medium heat, then set aside.

  • step 2

    Whisk the eggs in a large bowl, then add the chopped vegetables, wilted spinach, a pinch each of salt and pepper and the chilli flakes. Mix well.

  • step 3

    Lay the tortilla onto a quiche tray, ensuring the edges come up the sides to form a crust. Pour in the egg mixture, sprinkle over the cheese and top with the cherry tomatoes. Bake for 20-25 mins until cooked through. Serve with a side salad, if you like.

Can this be frozen and if so how long will it keep in the freezer please?

Yes you can, once cooked for up to 2-3 months in an airtight container. Reheat in the oven once defrosted or the tortilla wrap will go soggy. Hope that helps

I was a bit doubtful about this but it was lovely! I couldn’t get the largest wraps so used two normal sized ones in two smaller cake tins. Also my wraps weren’t seeded so I sprinkled a tablespoon of mixed seeds on top with a drizzle of olive oil before baking. The eggy filling puffed up…
