Method

  • step 1

    Heat the oven to 180C/160C fan/gas 4 and line a baking tray with baking parchment.

  • step 2

    In a large bowl, mash the bananas until smooth or use a stick blender to make a purée.

  • step 3

    Add the oats, nuts, seeds and cinnamon to the banana mixture. Stir well until everything is evenly coated. Spread the mixture evenly on the prepared baking tray.

  • step 4

    Bake for 12 mins, then stir well and bake for another 10-15 mins until golden and crunchy. Turn off the oven, open the oven door very slightly lightly and leave the granola in the oven to cool. The residual heat will make it more crunchy. Leave to cool completely before transferring to an airtight container. It will keep for two weeks.

Just made this its delicious, i used uncooked but well rinsed quinoa . I also added some orange zest & freshly juiced orange to the banana before mixing, I'm looking forward to breakfast in the tomorrow!
