  • 8 large pork sausage
  • 2 garlic clove, crushed
  • 400g can chopped tomato

Method

  1. Heat oven to 220C/200C fan/gas 7. Place the onion, courgettes and red pepper in a baking dish, large enough to fit them in a single layer. Drizzle over 2 tbsp of the olive oil and season. Cook in the oven for 20 mins.

  2. Meanwhile, heat the remaining olive oil in a frying pan and cook the sausages for about 5 mins until lightly browned on all sides.

  3. Stir the garlic and chopped tomatoes into the veg, season again, then place the sausages on top and return to the oven to cook for a further 20 mins until the vegetables are tender.

Just made this and it was delicious i wrapped the sausages in smoked streaky bacon and served it with pasta and it went down a treat with my two very fussy little uns

Really easy, really yummy. Goes down well with whole family - will add little less garlic next time for my little one but I loved the garlicky flavour. Great with rice.

Made this tonight and added olives, Italian herbs, oregano, basil, marjoram and cumin seeds. Cooked it slightly differently, grilled the sausages first, whilst the tomatoes, corvettes and peppers were cooking in the oven. Once the majority of the sausages were cooked, I added them to the veg mix in the oven win the herbs and olives. Cooked them for a further ten mins and served with a lemon and coriander couscous. Went down a storm :) Delicious

Lovely simple dish. I used good quality Lincolnshire sausages and also par-boiled and roasted some baby pearl potatoes to go with the dish. I think it needs some cumin or fennel seeds to add a bit more flavour next time.

Thought this dish was tasty, I added mushrooms, green beans & some wholemeal pasta which made it a more substantial meal. Be adding to my weekly meals :)

Good and economical meal for the evening, I used a mixture of vegetables that were looking past their best. And baked the sausages in the oven along side the vegetables, so any excess fat is cooked off.

I made this in the week, very easy weekday meal to make and it tastes great. I've made ratatouille before but especially liked this recipe because of the sausages which my children love. We eat ours with pasta and there was still a bit left for me to take to work for lunch the next day. This recipe is a keeper!

I just made this for tea tonight, was lovely and a perfect recipe. I added my own twist to it by wrapping bacon around the sausages and adding herbs and parsley :) yum yum yum!!

I just made this meal tonight. It was very easy to make and even easier to clean up.
I would not say it is for four people unless you add a side to it like rice/pasta or potatoes.
I will be making this recipe again with some small changes to it.

Just had this for dinner , tasted great! i have added 1 yellow pepper and 2 more onions and some mushrooms will defenitely make it again! perhaps substitute the saugages with meatballs

I seasoned the roasting veg with celery salt and added oregano with the tomato sauce. Since my 5-year old doesn't eat 'spicy' but I do, I also added a little dried, crushed chilli to mine at the table.

Very easy and tasty meal with minimal washing up, ticks all the boxes for me :)
