Ingredients

  • 4 skinless boneless chicken breasts
  • 1 tbsp olive oil
  • 300ml chicken stock
  • 4 tbsp fine cut marmalade
  • 1 tsp thyme leaves

Method

    1. Season chicken with salt and pepper. Fry in the olive oil for 10 minutes turning over half way
    2. Add stock, marmalade and thyme. Simmer for 5 minutes.
    3. Remove the chicken and keep warm.
    4. Boil the mixture to a syrup and pour over chicken.
