Method

  1. Cook pasta in a large pan of salted boiling water, according the packet instructions
  2. Whisk eggs and egg yolk. Mix in cream and parmesan. Add smoked salmon, zest and lemon juice and season with black pepper
  3. Drain pasta and add egg and cream mixture
  4. Cook over a very low heat for approx. 2 minutes. Add parsley and serve

  • 142ml double cream
  • Small amount grated parmesan
  • 170gms smoked salmon, sliced
  • Zest and juice of half a lemon
  • Black pepper
  • Small bunch flat leaf parsley
