Hot-smoked salmon with creamy pasta & pine nuts

Add a few special ingredients to this simple pasta sauce and you have an impressive meal for friends in just 15 minutes

Method

  1. Cook the pasta in boiling salted water according to pack instructions. Meanwhile, bring the wine to the boil in a large frying pan, then simmer for 1 min. Reduce the heat, stir in the cream and season well.
  2. When the pasta is cooked, drain briefly and tip into the frying pan with the sauce. Add the Parmesan and flaked salmon pieces, and mix gently together. Pile into bowls, sprinkle with pine nuts and serve with the watercress salad (recipe below) alongside.

Watercress & cucumber salad

...with citrus poppy seed dressing. While the pasta is cooking, make the salad. For the dressing, whisk together 1 crushed garlic clove, ¼ tsp English mustard powder, 1 tbsp poppy seeds, 1 tbsp orange juice, zest and juice 1 lemon and 5 tbsp olive oil. Season well. Can be stored in the fridge for up to 1 week. Give the dressing a good shake and toss half with 200g watercress and some cubed cucumber. Serves 6.

    This was delicious and loved by all the family, I made the (rather expensive) hot smoked salmon go a little further by throwing in some strips of ham - unconventional but it seemed to work for us!

    Very quick and easy. I used peppered hot smoked salmon as they only had that or sweet chilli salmon in my supermarket, I think the extra pepper balanced the cream and stopped it being too sickly. Salad dressing was nice with the citrus flavours but I tried three supermarkets and a health food shop and everyone was out of stock of poppy seeds so we had to do without!

    Quick and easy to make - I used half-fat creme fraiche instead which still gave it a good consistency although I left out the pine nuts as I gave this to my 15 month old too!

    Qucik, easy and delicious - saved a bit of money by using some existing salad dressing, but will make this one at another time and cut the portion size down for one person - great!

    I love this recipe and so do my O/H and two teenagers. I do it as per the recipe for special meals but have made it with ordinary tinned salmon for a midweek family meal and it still tastes great. Haven't made the salad, serve with crusty italian bread instead. yummy!!!

    This is just divine!!! Fab treat feel good meal after a late night at work- easy to whip up & most enjoyable. Served with a simpe green salad with olive oil & balsamic dressing. This has none of the heaviness sometimes associated with pasta. Added to the repeat cooking list. A winner. Smart enough to serve to riends as well

    Yum yum yum! Works quite well with Marscapone too if you're not too much of a creme fraîche fan like me, and don't want to go with the double cream. Added a bit of dill too for some extra flavour and served with a plain old salad from a bag with chunks of cucumber as the kids aren't great with watercress, and topped it with balsamic sauce.
