  • 4 wholewheat pitta bread
  • 4 tsp sun-dried tomato purée
  • 3 ripe plum tomatoes, diced
  • 1 shallot, thinly sliced

  • few basil leaves, if you like


  1. Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.

  2. Place on the hot sheet and bake for 10 mins until the pittas are crisp, the cheese has melted and the chorizo has frazzled edges. Scatter with basil, if you like, and serve with a green salad.

Fab !!!! Healthy easy pizza's made with your favourite choice of toppings. Better than a frozen pizza !! Pepperoni ontop was lovely !

I love this idea, you could probably use cheezly vegan cheese and chargrilled veggies (like peppers, aubergine, mushrooms etc) to make them vegan, with some olives atop! Mmmm
Or maybe redwoods veggie chorizo?

Very quick and very easy! My two year old can be quite fussy with food, but getting her involved by letting her put on the sauce, cheese and other toppings encouraged her to eat more as she made it!

Tried this, and put some Mozzarella (grated) in the middle of the pitta (little hole so it doesn't rip) which also worked really well :)
