Method

  1. chop the tomatoes and red onion in to chunks and put into a blender with the rest of the ingredients. pulse to desired consistency, but not liquidised.
  2. goes well with salmon, steak and burgers. can be chilled up to 4 days serve at room temperature

  • 1 lime, juiced (and zest)
  • 3 tbsp of red wine vinegar
  • 2 tbsp of olive oil
  • 1 tbsp of tomatoe pure
  • 1 spring of mint
