Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the parmesan and curry powder together. Season the lamb, then press the meat into the cheese mix to coat. Heat the oil in an ovenproof frying pan or heavy baking tray and fry the cutlets for 2 mins on each side to brown.

  2. Transfer to the oven for 5 mins for medium, or longer for well done. Delicious served with a dollop of tomato chutney and some mash flavoured with chopped coriander.

I only had thai 7 spice powder so used that with a bit of ground coriander and cumin mixed in. On the George Foreman with a bunch of asparagus and oh my days! It feels like it shouldn't have worked but it really, really did. Having it again for dinner tomorrow. YUM.

Another triumph in Mac's kitchen. Very easy, very tasty.

I made this lamb cutlets before i came across this recipe as it is a family favourite.I made it more indian style with indian spices and shallowed fried it in olive oil with spicy rice and it went down a treat

This was delicious! Even my husband, who usually won't touch anything curried, really loved it. When I do it, I brown the lamb first, then pile the cheese mix onto only one side and then pop into the oven.
