Ingredients

  • 4 large plum tomatoes, chopped
  • 1 cucumber, peeled and diced
  • 1 tin of chick peas, drained and rinsed
  • 8 oz. sharp cheddar, can use reduced fat cheese
  • 6 oz. reduced fat sour cream
  • 2 tbsp. fresh lime juice
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 5 or 6 oz. baby spinach
  • 2 oz. fresh cilantro, chopped

Method

  • STEP 1
    Combine tomatoes, cucumber, chick peas and cheese in a large bowl.
  • STEP 2
    Mix together sour cream, lime juice, salt and pepper in a small bowl.
  • STEP 3
    Add to cheese mixture, toss well. Spoon over spinach leaves, sprinkle with cilantro.
