Ingredients
- 4 large plum tomatoes, chopped
- 1 cucumber, peeled and diced
- 1 tin of chick peas, drained and rinsed
- 8 oz. sharp cheddar, can use reduced fat cheese
- 6 oz. reduced fat sour cream
- 2 tbsp. fresh lime juice
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 5 or 6 oz. baby spinach
- 2 oz. fresh cilantro, chopped
Method
- STEP 1Combine tomatoes, cucumber, chick peas and cheese in a large bowl.
- STEP 2Mix together sour cream, lime juice, salt and pepper in a small bowl.
- STEP 3Add to cheese mixture, toss well. Spoon over spinach leaves, sprinkle with cilantro.
