Lemon biscuits

These crisp, zesty biscuits work beautifully with the sweet lemon icing

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Whizz the flour and butter to breadcrumbs, add the sugar, lemon zest and egg yolk and process to a dough. Roll the dough to 5mm thick and cut out biscuits. Put on a buttered baking sheet and cook for 15-20 minutes. Cool.
  2. Sift the icing sugar into a bowl and mix with enough of the lemon juice to make a runny icing. Drizzle the lemon icing over the biscuits.

    Absolutely delicious. Found the lemon flavour could have been stronger so tried making with orange which was equally tasty. Also made half without the icing sugar which my family seemed to prefer (unusual as we all have a sweet tooth)!

    I made these as Christmas biscuits. They were so once I'm making another batch Lovely taste. Maybe could try a different citrus fruit lime or orange would work ,I will let you know.

    Wow, these are yummy! I have just made a batch, I think that I might have made them big as I got 20 and I couldn't wait to try the first one so had one with melting lemon icing, lovely. I will definitely do these again, thank you for sharing this.

    Not very lemony despite doubling zest. I used cold butter and I think that's why the dough didn't bind together easily in the processor - I had to take it out and work it with warm hands to get it into a dough. I rolled the dough out very thin and it made lots and lots of lovely crisp biscuits. Will try orange next time.

    Oh dear.. not sure where i went wrong but i thought these were just boring.. ;-( I bake quite a lot and these lacked flavour. I added the exact ammounts (icing way to much).. I'll stick to my shortbread i think. Sorry guys.

    These were great biscuits for a first time try at biscuit making! Lovely lemony flavour especially with the icing - we made no alterations to the recipe but will experiment with orange and maybe ginger flavours - kids already looking forward to them at xmas with coloured icing and sprinkles!

    Came across this recipe while looking for a better rollout recipe than the crappy one I used before. These biscuits turned out wonderful! They were light and buttery and did not taste like flour at all. I substituted two teaspoons of lemon extract (not the artificial kind) for the lemon zest and decorated with piped royal icing made with lemon juice. The biscuits were really nice with or without the icing. Didn't need to dust with flour while rolling on non-stick cooking paper, but had to re-refrigerate the dough halfway through. The dough shapes were too soft to move after cutting with cookie cutters, so I just peeled off the excess dough and placed the whole sheet of cooking paper on top of the cookie sheet to bake. The cookies puffed up a little bit in the oven, but kept their shapes well.

    My first biscuits! Made them in two goes so I could enjoy them fresh each time. The dough kept very well in the fridge. I found it hard to combined flour and cold butter � any advice?
