Ingredients

  • 2 tbsp sweet chilli sauce
  • grated zest 1 orange, plus 2 tbsp juice
  • 1 garlic clove, crushed
  • 1 tbsp good-quality Thai red curry paste
  • 8 chicken drumsticks, skin removed, the flesh slashed

Method

  1. Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Mix the chilli sauce with the orange zest and juice, garlic, curry paste and ¼ tsp salt. Add the chicken and coat really well.
  2. Arrange the drumsticks on the foil, spaced apart. Coat the chicken with any marinade left in the bowl, then roast for 35-40 mins until tender. Wrap in foil or pack into a food container.

Love, love, love these...however Thai Thighs are yummier than drumsticks, nomnom.

I made this as dinner for me and my fiance. As we like the food with lot of taste, I used more of all the spices, but I think I've used to muche orange juice. Also, next time I'll do this, I'll put the drumsticks in the oved covered, because we like our food more humide.

I made with chicken breast for the barbecue, marinated for a few hours beforehand then basted with marinade during cooking - easy recipe and delicious: will definitely be making again

Tried these yesterday for a street leaving do. They were tasty but perhaps I should have marinated for longer as the flavours were not that deep.
Added a little honey for stickiness .
They took longer to cook than the recipe says as well.
I would try again but leave longer to marinade
