A suberbly easy royal icing for that great looking Christmas cake.

Ingredients

  • 450g Icing Sugar
  • 2 Egg whites
  • 1 tspn Glycerine

Method

    1. Sieve Icing Sugar
    2. put the egg whites into a clean grease free bowl.
    3. Beat the egg whites whilst adding the icing sugar a little at a time, until it becomes a thick creamy consistancy and standing peaks.
    4. add glycerine and beat in.
    5. spread over cake and use knife to lift peaks.

I used this royal icing recipe to cover my marzipaned Christmas Cake and it tasted lovely. Light and just the right texture. However on cutting the cake the icing came away from the marzipan, can anyone suggest what went wrong?

Tried this for the first time tonight. It was so easy - i made it whilst cooking dinner - effortless. Looks and tastes perfect.
