Ingredients

  • 4 small sweet potatoes (about 200g each)
  • 185g can tuna in spring water, drained
  • ½ red onion, finely sliced
  • 1 small red chilli, deseeded and chopped
  • juice 1 lime
  • 6 tbsp Greek yogurt
  • handful coriander leaves

Method

  1. Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  2. Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

Given that 4x baking potatoes costs £1 in my local supermarket, and sweet potatoes are approx £1 each, I'm not sure how switching to sweet potatoes makes it a cheap meal?

That was my first adventure with sweet potato, and even though I don't like the combination of sweet and savoury my fear of them is now gone. This was delicious!

This is so quick and really simple. It's delicious and very filling with a simple salad. Even the husband loved it!

This is a really lovely dish. I didn't go too heavy on the coriander as I'm not a massive fan of a heavily aniseed taste. Works equally well with a typical jacket potato as well as the sweet.

Enjoyed this recipe, easy and quick to make, tweeked it slightly and searved with a side salad. Made a great dinner.

I wasn't sold on the idea of a sweet potato as a jacket -the humble spud would always have been my first choice. But these are just amazing! I took the advice to reduce cooking time -bung them all in for about 8 minutes in the microwave, then in an oven to crisp up the skin for 10 while you prep the topping/ drinks/ sort out plates cutlery and a nice side salad. Soft flavorsome center with a crispy skin, and the topping had the prefect amount of everything the zingy lime and chili with the tuna and yogurt was so refreshing and the red onion ! I was so skeptical of it working all together but they do! Will be making again and would recommend to anyone unsure!

Such an easy recipe! and super healthy.
Tips: Potatoes only need 15-17mins in microwave.
I added a chopped clove of garlic!

This is a great recipe for using the leftover bits from the fridge. Its quick & easy & doesn't need to be a work of art!

The flavours did not turn up good.. i forced myself to finish since i'm in a protein diet.. but would not do it again..ugh!

Tried this tonight was lovely. Wasnt sure about the lime but worked really well. I cooked the sweet potato for about 14minutes in the microwave then put them in the oven for about 5 minutes as we like the potato skin crispy.

Super quick tasty lunch or dinner. Great to have on standby if you're in a hurry also easy ingredients to take to work and make a healthy lunch with the microwave.

Really nice, quick dinner! I replaced the red onion with spring onion, skipped the coriander (not a fan) and sprinkled the yoghurt topping with paprika. Very tasty!

Very tasty & so very good for your health. Thought the combo of ingrediants was unusual but I'm focusing my diet around foods that are believed to have anti-cancer properties & odd as it sounds, this recipe ticks all the boxes.
So glad I tried it. The sourness of the lime & saltiness of the tuna work really well against the sweet potato and the chilli & onion add that bit of texture against the softer ingredients. Will definately be making this a regular favourite.

A very nice lunch dish, as it is extremely easy and can be altered to suit your tastes. I have made it both as the recipe instructs and with alterations, such as using cream cheese mixed with the tuna and adding some paprika. It also makes a nice alternative to your average jacket potato!
