  • 6 ripe vine tomatoes, deseeded and chopped
  • 1 small cucumber, diced
  • 1 red onion, very finely chopped
  • 6 tbsp fresh coriander, chopped


  1. Mix together the tomatoes, cucumber, red onion, and chopped coriander, but don’t season until just before serving

I like this Tomato Salad - Need: 2 Tomatoes 3 Cucumbers 1 Red Onion 2 sprigs of Fresh dill 1 tbsp Extra Virgin Olive Oil Pinch of Sea salt Pinch of Black Pepper

I just spent about ten minutes Googling how the heck I'm supposed to "chop" seeds, only to find out that what the recipe calls "coriander," (which is always just the seeds here in the USA) we call "cilantro." I only just now noticed that this site was called, and I did not know the difference in the two terms was not universal. I didn't even know that coriander seeds weren't the only parts of the plant used in cooking, much less that the plant is the same as cilantro!

A refreshing and simple salad, added a bit of lettuce for bulk and some olives too. Went well with a veg filo tart.

I wanted a recipe to use up my home grown cucumbers and this was perfect. It's so quick and simple and could be adjusted in so many ways for variety. I added finely chopped red chilli and salt and pepper last night which was a good start. Will grow corriander next year to go with my home grown cues and toms.

Really easy and I can see it going with a lot of dishes, not just Indian ones. It tasted even better the following day as the flavours had deepened.
