Ingredients
- 30 gr Baking Soda
- 10 gr Baking Powder
- 200 gr Bread Flour
- 75 gr Milk Powder
- 600 gr Brown Sugar
- 10 gr Salt
- 650 gr Whole Wheat Flower
- 150 gr Bran
- 200 gr Raisins
- 150 gr Walnuts
- 460 gr Vegetable Oil
- 900 ml Water
- 4 Eggs
- 5 gr Vanilla
- ***** Instead of using 900 ml of water and 75 gr of milk powder you can substitute with 975 ml of milk.
Method
- STEP 11. Sift together the bread flour, baking soda, baking powder and milk powder.
- STEP 22. Add the rest of the dry ingredients to the above and blend well by hand.
- STEP 33. In a separate bowl; whisk together the eggs and oil until blended.
- STEP 44. Add the water to the egg mixture and whisk together.
- STEP 55. Make a well in the centre of the dry ingredients and add the wet ingredients. Fold together just until blended. DO NOT OVERMIX!!!!!
- STEP 66. Let the mix rest for approx. 10 to 20 min. so the bran has time to soak up the liquid.
- STEP 77. Grease top of 3 muffin pans. Paper line the muffin cups.
- STEP 88. Once mix has rested, deposit batter with piping bag evenly over 3 doz. Muffins.
- STEP 99. Bake muffins at 400F for approx. 20 min.; until the muffin springs back when touched.
- STEP 1010. Remove muffins from tins directly after baking to prevent ÃÂâÃÂÃÂÃÂÃÂsweatingÃÂâÃÂÃÂÃÂÃÂ.
