Italian chicken & rosemary stew

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the chicken thighs in a little olive oil until browned then scoop out the pan. Add the onions and cook until softened. Add the garlic and rosemary and cook for a minute. Add the balsamic and cook for a minute, then add the rest of the ingredients, bring to a simmer then cover and transfer to the oven for 1 hour. Stir in the parsley and serve with crusty bread if you like.

    I realy want to try this recipe but cannot get pearled spelt anywhere, does anyone know what i could use as an alternative?

    Lynndie - I guess you could use pearl barley,lentils or even rice as an alternative. Hope it works! Sue.

    I used barley instead of spelt and it was yummy and easy to make. We had it on it's own but I think it probably needed the bread to make it a bit more filing.

    Easy to make and delicious, I doubled the amount of potatoes. The only place I could find pearled spelt was Waitrose and it is worth using for the taste.

    Just finished eating this. It was really good. We didn't have any spelt, so I added some rice towards the end to the dish. Worked well too.

    Both me and my partner really enjoyed this. We only had two chicken thighs so bulked out the stew with a couple of sausages and some smoked bacon. Like another reviewer suggested we used rice instead of pearled spelt. I cooked it on the hob instead of the oven but it needed more liquid adding to make sure it didn't dry out or stick. Would make again.

    Doubled recipe. Very simple to make and enjoyed by all, including 4 kids aged 1-7. I didn't have any spelt so just thinker sauce with a bit of cornflour which worked well. Will definitely make this one again.

    I have just prepared this dish for tonites dinner for four . I agree that there wasn't much juices so added a tin of Italian chopped tomatoes and a bouquet garni, I also didn't have any pearled spelt - so am using red lentils and as I am cooking this in a slow cooker will add them an hour before dish is ready . I will take a trip to waitrose and keep my eyes peeled for pearled spelt as I would like to make this again again with the correct pulse - sometimes it does make a lot of difference !!

    This is a fantastic, fail safe, easy recipe. Have made it for a few last minute gatherings and has always gone down well. It is sweet, sticky and just delicious! I have made it with barley when unable to get spelt and has always been a success. It is a much better texture than rice in this dish and doesn't soak up as much of the liquid so you will not have to ass extra liquid. I serve with some curly kale, spinach and/or green beans. YUM!
