Method

  1. Grind half the coconut. Add 2 cups of hot water and squeeze out the milk.
  2. Soak the tamarind in the milk for one hour. Strain before use.
  3. Now grind all the spices with the remaining coconut to a fine paste.
  4. Fry this paste in oil till evenly browned. Add the first and the coconut milk. Lower the heat and cook for about 15 mins
  5. Serve hot with white rice.

    Might have to replace the fresh coconut with grated/milk but if I can find some tamarind I will try this recipe this evening, it sounds delicious!
