A quick and healthy colourful midweek dinner which can be mixed up as vegetarian or made with meat.
1 Red Pepper
Half a Red Onion
150g Wholegrain Rice
20g Grated Cheese
Teaspoon of Salt
Teaspoon of Tomato puree
Start by preparing the vegetables. Red pepper - chopped Red onion - chopped Courgette - grated Cheese - grated
Heat some oil in a pan on medium heat and put the chopped peppers and onions in mixing occasionally. Add the courgette after a few minutes after. Sprinkle some salt over the vegetables and stir.
Add cooked wholegrain rice to the pan and mix in a teaspoon of tomato puree. Leave on a low heat stirring occasionally for a few minutes and then add the grated cheese. Once the cheese is melted, serve hot.
