Veggies & Rice

A quick and healthy colourful midweek dinner which can be mixed up as vegetarian or made with meat.
- 1 Red Pepper
- 1 Courgette
- Half a Red Onion
- 150g Wholegrain Rice
- 20g Grated Cheese
- Teaspoon of Salt
- Teaspoon of Tomato puree
- STEP 1Start by preparing the vegetables. Red pepper - chopped Red onion - chopped Courgette - grated Cheese - grated
- STEP 2Heat some oil in a pan on medium heat and put the chopped peppers and onions in mixing occasionally. Add the courgette after a few minutes after. Sprinkle some salt over the vegetables and stir.
- STEP 3Add cooked wholegrain rice to the pan and mix in a teaspoon of tomato puree. Leave on a low heat stirring occasionally for a few minutes and then add the grated cheese. Once the cheese is melted, serve hot.
