Really easy and delicious sauce to go with a chicken dish.

  • 1 Onion
  • 1 Chicken stock cube
  • 150ml White wine
  • 300ml Double or single cream
  • Crushed garlic clove (optional)
  • Spinach (optional)
  • Olive Oil


    1. Fry the chopped onions in the oil in a frying pan until soft.
    2. Next add the stock to the pan along with the white wine and simmer for 10 minutes.
    3. Pour in the cream and add the spinach and garlic and simmer for further 10 minutes or until a desirable thickness is achieved.

For those wondering about the amount of stock 100-150ml depending on whether your using single or double cream.

Absolutely delicious and so simple to make! Sauce is probably good for 3 generous servings!

Really tasty recipe which I used with fish. Rather large helping for 2 so I halved the quantities. I added the wine without the stock initially and reduced it somewhat before adding the stock and then the cream. I seasoned with black pepper and salt at the end. Made a great partner to the lemon sole, so thank you to the author.

I used this sauce for a chicken, bacon and leek pie. My family gave it 11/10, it was delicious. I added 1 tsp fresh chopped thyme and 1 tsp chopped fennel seeds as well.

Wow, easy, yet VERY tasty sauce. I received compliments from my Mum & Boyfriend (high praise indeed) when served with pork, crushed roasted potatoes, butternut squash & broccoli. Thank you

Why not try yogurt for a low fat alternative. Thick set is best.

Add mushrooms in with the onions if you love mushrooms!
