  1. Cook the quinoa according to pack instructions, adding the vegetable stock cube to the cooking water. Leave to cool, then break up any clumps with a fork. Mix through remaining ingredients and serve.

I've never tried quinoa (sorry folks) so tried this out on my vegie sister. I cooked the quinoa first to see what it was like. There was no way I was going to serve this up so I fried a red onion together with the spring onions, in a little olive oil together with one red pepper and one orange pepper and a couple of chillies v.small when the onions and peppers were soft, added the lime zest and some coriander mixed it all together with the quinoa. Tasty and spicy. Sorry I've completely changed this but it was necessary for spice lovers and this version can be served hot or cold.
