  1. Bring a pan of salted water to the boil, cook the green vegetables for 2 mins only, then drain.

  2. Heat the oil in a large frying pan or wok, then fry the chicken slices for 4 mins until almost cooked. Add the drained green veg, chilli, stir-fry sauce and soy sauce. Stir-fry briefly to heat everything through and to finish cooking the chicken. Mix in the cashews and spring onions, then serve.

Delicious and fresh. I didn't boiling the veg (brocolli, chestnut mushrooms, baby corn, onion, green pepper) first just put them straight in a pan on a high heat. Roasted the cashews for

Very nice, I didn't use cahews and included red chilli and ginger and used whatever veg was in my fridge. Definately a good recipe to use up any left over veg.

Went down a treat. I used bags of asda mixed fresh veg - carrots, broccoli,green beans, corn cobs,leeks and cabbage. Even my veggie hating son ate most of them - amazing what a nice sauce will do!

I followed the recipe except for the cashews, and it was wonderful! I'd definitely try fresh veggies next time, as I opted for a frozen veggie mix, which made them a bit mushy, but my roommies were definitely delighted. Cheers!
