  • 200g penne
  • 2 skinless salmon fillets
  • 60g sundried tomatoes
  • 80g bag spinach

Method

  1. Cook the pasta following pack instructions. Fry the salmon for 4-6 mins with the tomatoes in their oil. Flake the fish in the pan, then add the drained pasta and the spinach. Stir for 1-2 mins until the spinach is wilted and everything is coated.

OK but no "wow" factor. Be careful with the sun dried tomatoes. If your salmon fillets are thick the heat required to cook them through is likely to give you burnt tomatoes. If I make this again I'll only put the tomatoes in towards the end of the cooking. Oh and it needs LOTS of seasoning.

Quite nice. But cooking in the oil means it is very oily
