  • 75ml half-fat soured cream
  • small bunch chives, snipped


  1. Heat oven to 190C/170C fan/gas 5. Prick the potatoes with a fork, rub with the oil, then toss with sea salt. Arrange on a baking sheet and bake for 1 hr. Let the potatoes cool for 10-15 mins, then cut a small cross in the top of each and pinch the bases to open a little. Add a teaspoon of soured cream to each, a little freshly ground black pepper, and a sprinkling of chives. Serve straightway.

These went down a treat at my Christmas buffet. Plenty for everyone (8 adults, two kids) with other bits to eat. Easy to prepare and really tasty! I was short on time so boiled them off for about 15 mins before putting in the oven. Turned out perfectly soft on the inside with a deliciously crispy skin. I'll definitely be making these again.

The alternative method. 4 mins in microwave, then oil and salt skins and grill for 4 mins turning frequently to crisp is an excellent, fast method of producing mini jackets. Perfect inside, perfect outside, and max 10 mins to produce.

Agree with other comments - massive hit at my party, everyone loved them. Very easy to do, don't skimp on the sea salt as I think that was what gave them so much flavour. Great idea!

Very nice idea to include along with other nibbles! Everyone loved them, although I have to say they didn't look anywhere near as neat as those in the photograph! I added cheese and chives to the sour cream to give a bit more flavour.
