  1. Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.

  2. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

This worked a treat, although it was a bit too sweet for us. So next time (and there will be a next time!) a bit less sugar. I did half the quantity and microwaved for 4 minutes - perfect! Enough for three adults in the family as a pudding with vanilla ice-cream and a dollop of cream.

Great recipe- quick, simple, tastes good and minimal washing up. Delia Smith toffee sauce took longer to make but a great addition.

Easily a winner in our family! If you fancy some dessert after dinner this is super easy and quick to make/cook! Goes really well with nutella or ice cream too - yum! Will try oven cooking it next time to see the difference :)

Lovely if oven cooked. Take another five/ten mins and oven cook this, it is so much better for it. That said, it is v nice and worth cooking. Great mid week standby pudding. My kids will eat it if microwave cooked, but much better in the oven.

I made this for the second time this evening. This time, I baked it (160 fan, 180 otherwise, @ 30 minutes), and it was lovely. When I microwaved it, it just didn't cook properly. I put it in for at least 15 minutes longer than the recipe said, because it wasn't cooked before - the texture was doughy, rubbery as it cooled, and it really wasn't very nice. Maybe my complete lack of experience in microwave cookery was to blame - I'm just glad that I can now remake this, and have a happy, satisfied husband!

Would you recommend covering the microwave-safe bowl with a plate or using a bowl with a lid? We cooked it without a dish on top and it was fine but looking for the best method

Hi, We haven't tried this with a lid on, you could try it but the mixture might stay damp and sticky on top if the steam can't escape. Please let us know if you try it. Thanks, Lulu

Mine didn't work for some reason?? Must of done something wrong.... such a shame was really looking forward to it after reading all the good comments. I think I will definately try again but might use the oven instead of microwave.

Mine was a bit stodgy - imprecise measurements or cooked too long (6 mins as Richards kakumanu suggests as opposed to 8 mins as the recipe suggests)?

Hi there, thanks for your question. All microwaves vary in power so perhaps it was a little undercooked. Try reducing the time then test with a skewer and add more cooking time if you need to.

Use this all the time when I have surprise visitors or have forgotten to make pudding! I drizzle salted caramel sauce on top to add an extra something.

I added half the quantity of coconut palm sugar http://bit.ly/1peNMBQ in place of the muscovado sugar. It was not overly sweet and the caramel flavour was amazing
