  • 1 chicken breast
  • 1 tsp chipotle paste
  • 1 lime, juiced

  • 2 cherry tomatoes, chopped
  • 3-4 pickled jalapeño slices, chopped
  • ½ small garlic clove, finely grated


  1. Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan to about 1cm thick. Mix the chipotle paste with half the lime juice and spread over the chicken.

  2. Heat a griddle pan over a high heat. Once hot, cook the chicken for 3 mins each side until cooked through, adding the cheese for the final 2 mins of cooking. Add the bun, cut-side down, to the griddle pan to toast lightly. Season the chicken.

  3. Meanwhile, mash the avocado with the remaining lime juice. Stir in the cherry tomatoes, jalapeño and garlic, and season with a little salt. Spread over the base of the bun, then add the chicken followed by the top of the bun.

Everyone in the family liked this. Made a jalapeno free one with minimal guacamole for super picky 7 year old and he loved it too! Tastes like a lot more effort was needed to make it too, as its so simple. Usually shove a bit of lettuce into the bun and make some sweet potato chips to go with them.

Delicious!!! This recipe is so perfect. I am planning to make it for my year 9 food practical assessment based on Mexico and it will be part of my "Comida Mexicana". I will serve with BBC good food's Mexican potatoes and Ultimate tomato salsa recipe.

Really delicious - easily doubled up to feed more and quick and easy. I recommend marinating the chicken beforehand. I just used mashed avocado with lime juice and coriander, as I had no tomatoes. I used a tsp of Tesco's own brand smoked chipotle paste and chose mature cheddar as the cheese. As I have no griddle pan I put under a hot grill for 7 minutes a side and soaked the cut side of the buns in the juices, yum! This would be great on the barbecue too.

These are totally delicious and a lovely change from beef. Now a firm favourite in our house!! Actually think I will make them tonight!!

Cook under a hot grill for approx. 7 minutes per side if you have no griddle pan. I also recommend marinating the chicken beforehand.

These are absolutely delicious, my biyfriend and I loved them. We marinated the chicken for an hour in the chipotle sauce before cooking which worked really well.
