
Macho peas

Ingredients
- 450g frozen peas
- 25g unsalted butter, softened
- 1 tbsp olive oil
- 2 tbsp fresh parsley leaves, roughly chopped
- 1 tbsp fresh mint leaves, roughly chopped
- pinch of chilli flakes (optional)
- lemon wedges, to serve
Method
- STEP 1
Cook the peas in a pan of boiling water according to pack instructions. Drain well, then use a fork to roughly mash some of the peas. Keep most of them whole.
- STEP 2
Return to the pan and add the butter, olive oil, herbs and chilli flakes, if using. Stir well to combine with a big pinch each of salt and pepper. Transfer to a serving bowl with the lemon wedges on the side for squeezing over.
