    There are few secrets to toffee. It is simply sugar that has been


  1. Ask your grown-up helper to switch the oven on to 190C/170C fan/ gas 5. Brush a small (500g/ 1 lb) loaf tin with a little oil.

  2. Peel the apple with a potato peeler, then cut it into quarters and cut out the cores. Ask a grown-up for help if you need to.

  3. Grate the apple using a rotary or box grater and put it in a large bowl.

  4. Break the egg into a small bowl. If any pieces of shell fall in, lift them out with a spoon. Add to the apple, then add 3 tbsp oil and the vanilla. Mix well.

  5. Add the flour and sugar and stir together. The mixture is quite stiff so keep going until all of the flour is mixed in. Scrape into prepared tin.

  6. Push 3 toffees into the mix in a row. Ask a grown-up to put the tin in the oven for 30-40 mins or until cooked through. Cool before tipping out and slicing.

This really didn't work for me, didn't rise nearly enough. The toffee part was nice though.

Made these today & they are delicious. I too doubled the quantity to make 12 muffins & took another review idea of sprinkling demerara sugar & oats for a lovely crunchy topping. I used some cadbury eclairs & put 1/2 sweet in each muffin. Will be making again.

Made this last night and doubled the recipe to make 12 muffins. Absolutely delicious with a piece of toffee hidden in the middle, next time I might chop the toffee up a bit smaller so there's more of it running through each muffin. I added a sprinkling of demerara sugar and oats to the top to give it a nice crunchy topping!

What sort of toffees are "Soft"? My immediate thoughts go to mini Rolos, but I'm sure that's not right.

looks delish. am gonna try for my friends bday as she lives toffee!!! if anyone wants a good muffin recipe then there is a choc and vanilla cupcake recipe on here.

I made six muffins too, with one toffee pushed into each, didn't change the recipe at all otherwise. They took around 30 minutes to cook. Went down very well - my boyfriend ate 3 in one go!

This was very yummy. I made this quantity into 6 muffins. Chopped the toffees in half and pushed one piece in each muffin. Used only 1TB of oil and it came out just fine, and paper cases so no oiling of tins required. Will make another lot this weekend, probably doubling the quantities to get a full muffin tray.
