  • 2 garlic cloves, crushed
  • 1 red chilli, finely chopped, deseeded if you don't like it too hot
  • 1 tsp ground allspice
  • ½ tsp dried oregano

Method

  1. Heat oven to 200C/180C fan/ gas 6. Put the thighs in a roasting tin and roast for 30 mins.

  2. Meanwhile, mix the oil, marmalade, garlic, chilli, allspice, oregano and some seasoning to make a marinade. Remove the thighs from the oven and brush all over with the marinade. Return to the oven and roast for another 20 mins until crispy and golden. Serve with some sweet potato wedges, lime wedges and salad, if you like.

Felt the chicken could have been cooked for a little bit longer, used chilli powder as cooking for children, but it was enjoyable and will make again, but will add lime juice to add some more tang!

Was slightly worried after reading the first two comments, but I'm with alexmasters91, it's very tasty. Couldn't find lime marmalade so used lemon and was very happy with the results. Will definitely do again.

What a great recipee! We halved it to serve 2 and still worked perfectly. Delicious.

This was a really bad recipe, nobody in my family liked it. This picture above, is not what will happen if you follow the recipe. Mine was brown from the all spice, and swimming in loads of liquid and tasted disgusting.
