  • 12 limes, 10 roughly chopped, 2 sliced

  1. Lay the lime slices on a tray and freeze for at least an hour. Put the remaining chopped limes (including the skin) in the bowl of a food processor or blender with the sugar and 100ml water. Whizz until really juicy and completely broken down.

  2. Pour the mix through a sieve, so that all the pulpy bits remain and you have lots of juice. Have a taste – if it’s too sour, add a bit more sugar. This can be made 2 days ahead and chilled. Pour into a big jug with lots of ice and the lime slices, and top up with soda water. Serve with a shot of vodka or rum, if you like.

I thought this would be a good recipe; why spend time zesting and juicing when you can chuck the whole lot in a blender? The reality was v different. I was using a food processor and started with half the recipe. I think perhaps when I took the lid off to help move on the stuck chunks some of the sugar stuck in the lid, so everytime I blended, juice spurted out of the top of the processor, not just a little, so much so that even with a cloth around the top it ran over my counter and all over the floor. The final product didn't taste fresh and zingy as I had hoped, but the inclusion of the whole fruit made it taste pithy with a sherbet tang. Not entirely horrible, but certainly not nice enough to be worth the effort.

Delicious. I made it up to adding the soda water (didn't have any) and then added cold water as if to cordial -really tasty. Also tried it with a shot of vodka. Both great. Will be making this again.

I just made it and it was way to sour. I made it for my family and they pulled faces and put tonnes of more sugar in. So I would say use less limes (I used 12) or more sugar. Thanks anyway for the recipe, it was still quite nice and I will make it in the future (but a lot less sour!) Joe
