  • 85g golden caster sugar
  • 175g plain flour
  • 75g demerara sugar
  • 85g salted butter, chilled


  1. Preheat the oven to 180C/fan 160C/gas 4.Toss the gooseberries with the caster sugar, spread in the bottom of a medium ovenproof baking dish with 2 tbsp water.

  2. To make the crumble, put the flour, butter and a big pinch of salt in a bowl. Rub together with your fingertips until you have a rough breadcrumb texture. Mix in the demerera sugar.

  3. Scatter the crumble topping evenly over the gooseberries. Bake in the oven for 45-50 minutes until top is pale golden and crunchy and the gooseberries bubbling. You can also give the crumble a quick flash under a hot grill to give the top an extra browning if you like.

Really good way to celebrate gooseberry season. We did half white, half brown flour and put some oats in as well. Wonderful with vanilla ice cream.

Excellent; I'd make this again, but would DOUBLE the crumble. I also tried adding some oats, which I think worked well. Serve with vanilla ice cream :)

I had a glut of gooseberries so I doubled all the ingredients (we too like a lot of crumble). It was absolutely delicious and even my husband ("I don't like gooseberries!") went back for seconds.

It is what it is, a good, old fashioned gooseberry crumble! The level of sweetness was just right (there was still a hint of shaprness from the gooseberries). We like a lot of crumble topping so I did one and a half times the amount of topping.

Excellent recipe, brought back lots of nice childhood memories. Nice simple recipe that was not too sweet.
