  1. Whisk the dressing ingredients in a jug, season with salt and set aside.

  2. To make the salad, peel the clementines and slice whole. In a bowl, gently toss the chicory and watercress with the fennel and onion. Place slices of clementine on opposite sides of each plate, mound a pile of leaves in the middle, then scatter over the feta. Stir the parsley through the dressing and drizzle over the salad.

Delicious! Lovely fresh flavours, slight bitterness from the chicory, saltiness from the feta and lovely bursts of sweetness from the clementine. Will definitely be making this again.

Delicious starter. Very light and fresh tasting. Made this Christmas Day to start and it went down very well. Quick and so easy to put together.

Made this for a Christmas starter last year and it went down really well. It's light so doesn't spoil your appetite for the main course. My mother in law asked for the recipe to serve at a subsequent dinner party so you can't get much better recommendation than that!
