Lemon and lime cake

Ingredients
- 3 eggs weighed in their shells
- equal weights of butter, SR-flour, brown sugar
- zest and juice of 2 limes and 1 lemon
- 1 tbs chopped almonds
- 2 tbs sultanas
Method
- STEP 1Preheat oven to 200 degrees C (180 fan oven)
- STEP 2Whisk the sugar and butter until light and fluffy
- STEP 3lightly whisk the eggs and slowly beat into the butter and sugar mixture
- STEP 4fold in the flour, lime and lemon zest and juice, sultanas and almonds
- STEP 5Pour the mixture into a well greased cake tin or loaf tin
- STEP 6Bake for 45 minutes or until a skewer pushed into the centre comes out clean
- STEP 7Leave for a few minutes in the tin before turning out onto a rack to cool
