  • 3 eggs weighed in their shells
  • equal weights of butter, SR-flour, brown sugar
  • zest and juice of 2 limes and 1 lemon
  • 1 tbs chopped almonds
  • 2 tbs sultanas

Method

  • step 1

    Preheat oven to 200 degrees C (180 fan oven)
  • step 2

    Whisk the sugar and butter until light and fluffy
  • step 3

    lightly whisk the eggs and slowly beat into the butter and sugar mixture
  • step 4

    fold in the flour, lime and lemon zest and juice, sultanas and almonds
  • step 5

    Pour the mixture into a well greased cake tin or loaf tin
  • step 6

    Bake for 45 minutes or until a skewer pushed into the centre comes out clean
  • step 7

    Leave for a few minutes in the tin before turning out onto a rack to cool

This recipe doesn't contain any amounts for the butter, flour and sugar, just says 'equal weights'. Also no reason why one needs to weigh the eggs? As such it's completely unusable.

I think the recipe means weigh the eggs and whatever they weigh you need the same weight each of the flour, sugar, and butter. Eg if eggs weighed 100g then you also use 100g butter, 100g flour etc
