- 3 eggs weighed in their shells
- equal weights of butter, SR-flour, brown sugar
- zest and juice of 2 limes and 1 lemon
- 1 tbs chopped almonds
- 2 tbs sultanas
Method
step 1
Preheat oven to 200 degrees C (180 fan oven)step 2
Whisk the sugar and butter until light and fluffystep 3
lightly whisk the eggs and slowly beat into the butter and sugar mixturestep 4
fold in the flour, lime and lemon zest and juice, sultanas and almondsstep 5
Pour the mixture into a well greased cake tin or loaf tinstep 6
Bake for 45 minutes or until a skewer pushed into the centre comes out cleanstep 7
Leave for a few minutes in the tin before turning out onto a rack to cool
